Form of a tube-shaped pasta of varying lengths and diameters sometimes slightly curved with characteristic ridges down their length. rigatoni’s ends are cut square (perpendicular) to the tube walls and its ridges make better adhesive surfaces for sauces and grated cheese. Our pasta is strictly artisan, handmade and extruded through bronze, as we’ve been taught by over two centuries of generations. This procedure gives it an exceptional flavour, thanks to the rough, porous surface which holds the sauce.
